After coming home, unfortunately I had a fridge of food that needed to be thrown. I'm not sure what James did the past 2 weeks, but there were a lot of veggies, bread, cheese etc that needed chucking that were there when I left.
So I was a bit sad that I had to deal with that, but I thought about all of the positive things I did today.
1. I do this regularly, but we use ALL of our water as much as we can. Leftover water from steaming veggies if boiling is used to kill weeds, when cooled is thrown straight on the plants. Water used in yoghurt container goes straight on our plants as well. We do the bucket in the shower trick too.

I made almond milk this morning and used the leftover pulp to make these crackers. https://detoxinista.com/easy-almond-pulp-crackers-vegan-paleo/ They also happen to be vegan.
3. before I left, I had some bananas that I knew weren't going to be eaten by James. I froze them and defrosted them this morning to make banana muffins. Now, what happened was purely an accident... I made them vegan.
In my normal banana cake recipe it has 3 non-vegan ingredients. Egg, milk and margarine/butter.
We normally use nuttalex margarine anyway so that was easy. I made almond milk this morning as I mentioned, so I used that. I also happened to not have eggs and was too lazy to drive and get some. So I tried the hold 1tbsp of flax seed meal + water trick and it seems to have worked.
Feeling much better now that I'm home and getting back into my routine of baking.
